Taste in order from lightest to most complex — typically: Coastal or Redgum first, then Blackbutt, then Jarrah last. Use a clean palate between varieties and taste each honey directly from a spoon rather than on food, which masks the flavour differences.
Note the colour differences between jars: lighter colour generally indicates lighter flavour. The tartness that distinguishes Jarrah from other Australian honeys becomes apparent immediately on the palate — there is no other honey that tastes quite like it.
