Blackbutt honey comes from Eucalyptus patens — the Blackbutt tree — a tall, straight hardwood eucalyptus native to the forests of south-west Western Australia. It is one of the least-known premium honeys produced in Australia, which is to say: most people who have tried it have not forgotten it.
Our hives are placed in Blackbutt-dominant forest in the Pemberton region, where the trees are large, old, and largely undisturbed. Like Jarrah, Blackbutt flowers irregularly — producing varying volumes of nectar from season to season. The result is a harvest that cannot be guaranteed, and a honey that reflects exactly what happened in that forest that year.

Blackbutt honey carries independently verified Total Activity (TA) using the University of Waikato agar well diffusion bioassay — the same method used for all South West Honey products and for Manuka honey research globally. Our Blackbutt TA35+ has been tested and certified by an accredited New Zealand laboratory.
TA35+ means the honey achieved a minimum of 35% phenol equivalence in laboratory testing. The actual measured result is available on request.

Cold-extracted below 40 degrees C to preserve enzymatic activity. Minimally filtered to retain natural pollen, enzymes, and the flavour compounds that heat processing destroys. Not blended. Not adjusted. Not treated for shelf life.

Golden amber. Assertive and complex — with a distinctive boldness that sets it apart from the deeper tartness of Jarrah. Notes of warm toffee and light spice, with a clean, dry finish. Holds up exceptionally well to heat in cooking without losing character.

Take 1-2 teaspoons daily, directly from the spoon or in warm water. In the kitchen: exceptional as a glaze for pork belly, roasted root vegetables, or baked brie. Pairs well with sharp aged cheeses and rye bread.

Western Australia remains free of the varroa mite — meaning our bees and their honey are produced in colony conditions unavailable in most other honey-producing regions.
