  • Three monofloral WA honeys, all independently certified at the highest TA rating in the South West Honey range. Each jar comes from a different tree species, a different part of the forest, and produces a distinctly different flavour profile — but all are certified TA35+ using the same University of Waikato agar well diffusion methodology.

    This is the pack for someone who wants the full picture of what WA active honey can be. Three varieties. Three characters. One certification standard.

  • Jarrah TA35+: Deep amber. Rich, complex, slightly tannic. Notes of caramel and dried fruit with a characteristic tartness. The most distinctive of the three.

    Blackbutt TA35+: Golden amber. Bold and assertive. Notes of warm toffee and light spice with a clean, dry finish.

    Redgum TA35+: Light to mid amber. Floral, smooth, and gently sweet. The most approachable of the three and the most versatile in the kitchen.
