Miller & Baker is a Perth-based bakery that mills its own flour from regeneratively farmed WA grains. Their pancake mix is made from freshly milled flour — the ingredient that creates the notably light, fluffy texture that standard premix products cannot replicate using older, industrially processed flour.
We stock it because the combination of a Miller & Baker pancake and a drizzle of South West Honey is, genuinely, an exceptional breakfast. WA-grown grain, WA-foraged honey. Two producers doing the same thing: not cutting corners on the ingredient that matters most.

Mix 150g of pancake mix with 1 cup of milk, 1 egg, and 1 tablespoon of melted butter. Stir until just combined — do not overmix. Drop batter in rounds onto a pre-heated, lightly buttered pan. When bubbles form on the surface, flip and cook until golden.
Serve with a generous drizzle of Jarrah TA35+ or Redgum TA35+ honey. The tartness and depth of the active honey cuts through the richness of the butter and gives the pancake a flavour profile that mild honey cannot achieve.

Jarrah TA35+ is the first choice for pancakes — the caramel and dried-fruit character of the honey, and the characteristic tartness, pairs exceptionally well with the slightly wheaten flavour of freshly milled flour. Redgum TA35+ is the second choice — lighter and more floral, it suits the pancake without dominating it. Coastal Honey works well for a milder, more conventional pairing.
