Jarrah honey comes from a single tree: Eucalyptus marginata, the Jarrah, a hardwood eucalyptus found only in Western Australia. Our hives sit in the forest surrounding Pemberton, in country that has never been sprayed, cleared, or farmed.
Jarrah trees do not flower every year. In a good season, they bloom heavily. In others, barely at all. This irregularity is not a weakness — it is the reason Jarrah honey is genuinely rare, and why every jar carries the character of a specific season in a specific place.

Total Activity (TA) is a bioassay measure of a honey's antimicrobial potency — expressed as the percentage phenol solution that would produce an equivalent zone of inhibition against Staphylococcus aureus. It is measured using the University of Waikato agar well diffusion method — the same foundational method used in Manuka honey research globally.
Our Jarrah TA35+ is independently tested by an accredited laboratory (Analytica Laboratories / ALS Food & Environmental NZ, Hamilton, New Zealand) every harvest batch. The TA35+ label means the honey achieved a minimum of 35% phenol equivalence. The actual measured result is available on request and is always reported conservatively below the tested figure.
As a guide: TA35+ is equivalent to approximately UMF 10-15+ Manuka honey on the New Zealand benchmark scale.

Cold-extracted below 40 degrees C to preserve the natural enzymes — including glucose oxidase, the enzyme responsible for Jarrah's antimicrobial activity — that heat processing destroys. Minimally filtered. No blending. No additives. No heat treatment for shelf life.
What is in the jar is what the bees made, in the forest, during that season. Nothing more.

Deep amber in colour. Rich, complex, and slightly tannic — with notes of caramel, dried fruit, and a characteristic tartness that distinguishes Jarrah from all other Australian honeys. It is a honey you taste slowly.

Take 1-2 teaspoons daily, directly from the spoon or dissolved in warm (not hot) water. Pairs exceptionally well with aged cheddar, blue cheese, sourdough, and dark chocolate. As a culinary honey: use in glazes for duck, lamb, or pork where its tartness and depth add complexity a mild honey cannot.
