  • A honeycomb cassette is a portion-cut section of raw comb — beeswax cells filled with honey exactly as the bees left them, sealed under a thin cap of fresh wax. It is the most direct, unprocessed form honey takes: no extraction, no filtration, no contact with equipment. Just comb, honey, and wax.

    Our cassettes are cut from frames harvested in the Pemberton region of south-west Western Australia, from hives placed in native forest that has never been sprayed or cleared. The flavour of the honey inside the comb reflects exactly which trees were flowering at the time of harvest — season to season, no two cassettes are identical.

  • Place directly on a cheese board and cut or break as needed. The beeswax is entirely edible — it dissolves as you chew and can be swallowed or removed from the mouth once the honey has been released. Either is normal.

    Pairs exceptionally well with aged hard cheeses (cheddar, manchego, pecorino), fresh ricotta, sourdough, and sliced pear or fig. It also works well on a breakfast board alongside yoghurt and fruit — the wax adds a pleasant textural contrast.

    For a simple and striking dessert: place a cassette on a wooden board with blue cheese and walnuts and serve at room temperature.

  • Store at room temperature away from direct sunlight. Do not refrigerate — cold temperatures cause the honey inside the comb to crystallise and harden, which affects the texture. Honeycomb is shelf-stable and does not require refrigeration.
